The Western diet is a dietary pattern typically consisting of foods high in fat, sugar, and sodium. What¡¯s more, these foods — like French fries and chicken nuggets — are often deep-fried in oil.
Though these foods may taste good, they may not be the best choice for overall health and well-being. For example, research has found links between the Western diet and increased risks of cancer, type 2 diabetes, cardiovascular disease, and dementia.

Recently, scientists from China investigated the possible associations between the typical Western diet and anxiety and depression. Their research, published on April 24 in PNAS, found that frequent fried food consumption is strongly associated with a higher risk of these mental health conditions.

Moreover, the team also revealed that a chemical present in fried foods may be the reason for this increased risk.
The population-based study included 140,728 participants who did not have depression within the first two years of the study¡¯s onset. Scientists followed the participants for just over 11 years.

The research team found that participants who frequently consumed fried foods had a 7% higher risk of depression and a 12% increased risk of anxiety compared to those who didn¡¯t eat fried food.
Moreover, fried potatoes, like French fries, were associated with a 2% increase in depression risk over other fried foods.

Acrylamide is a compound created when foods are heated to a high temperature during frying, roasting, or baking. The chemical has been linked to cancer in animal studies and is primarily present in foods like French fries, grain products, and coffee.

According to studies, previous research on zebrafish showed long-term acrylamide exposure induced anxiety and depression-like behavior in the fish. Specifically, the chemical downregulated gene expressions related to the blood-brain barrier and promoted neuroinflammation.

However, nutrition experts caution that the early results do not identify whether consuming fried food items is the major factor causing mental health problems or whether those people already suffering from anxiety and depression started eating fried items as a form of self-medication.
The study analysed data of 140,728 people over 11.3 years and found that those consuming more than one serving of fried food regularly were more likely to be younger men. The study also revealed that fried potatoes have a 2% increase in the risk of depression over fried white meat.
